- 1.5 pounds of ground beef (or ground chicken/turkey if you choose)
- 1 small red onion, chopped
- 2 cloves garlic, minced
- 1 can (10 oz) Rotel tomatoes with green chilies
- 4 cups beef broth (or chicken broth for a lighter flavor)
- 1 package of cream cheese (8 oz), softened and cubed
- 1/2 cup heavy cream
- 1 can (4 oz) diced green chiles
- 2 tablespoons chili powder
- 2 tablespoons Ranch seasoning mix* (see notes)
- 1 tablespoon garlic powder* (see notes)
- 1 tablespoon onion powder* (see notes)
- 1 teaspoon black pepper
- 1 teaspoon red pepper flakes (optional for spicy food lovers)
- 1 tablespoon olive oil
- 1 cup shredded cheddar cheese
- Lime juice, to taste
Optional toppings
- Dollop of sour cream
- Additional shredded cheddar cheese

Notes
If the ranch seasoning mix is used, omit the garlic & onion powders.
If you use the garlic & onion powders, reduce the Ranch seasoning mix by half.
Instructions
1.Sauté the Ground Meat: In a large pot (or using the sauté function of your Instant Pot), heat the olive oil over medium heat. Add the ground meat and cook until browned. Drain any excess grease.
2. Combine Ingredients in Crock Pot: Transfer the cooked meat to your crock pot. Add the chopped red onion, minced garlic, Rotel tomatoes with green chilies, beef broth, diced green chiles, chili powder, Ranch mix (if using), garlic powder, onion powder, black pepper, and red pepper flakes. Stir well to combine.
3. Cook on Low Heat: Place the cubed cream cheese on top of the mixture. Cover and cook on low heat for 3-4 hours, stirring occasionally to help the cream cheese melt and blend into the soup.
4. Add Creaminess: About 30 minutes before serving, stir in the heavy cream and shredded cheddar cheese. Continue to cook until the cheese is melted and the soup is creamy.
